Ingredients
  

  • 3 pounds russet potatoes peeled and sliced 1/8-inch thick
  • 1 pound smoked sausage sliced
  • 2 cups sharp cheddar cheese grated
  • 1/2 cup Parmesan cheese grated
  • 3 tablespoons fresh chives chopped
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups whole milk warmed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 375°F. Grease a 9x13-inch baking dish. Slice and pat potatoes dry.
  2. Brown sausage slices in a skillet over medium heat, 2-3 minutes per side. Set aside.
  3. Melt butter in the skillet, whisk in flour, cook 2 minutes. Gradually whisk in warm milk. Add seasonings and simmer until thickened.
  4. Layer potatoes in the dish, add sausage, sprinkle cheese, and pour sauce. Repeat for 3 layers, topping with cheese.
  5. Cover with foil and bake 45 minutes. Uncover and bake another 15-20 minutes until golden and bubbly. Rest 10 minutes before serving.
