Polish Sausage and Potatoes Crock Pot

Ingredients
  

  • 2 pounds Polish kielbasa sausage sliced into 1-inch rounds
  • 2 pounds baby potatoes or Yukon Gold, cut into chunks
  • 1 large yellow onion sliced
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 3 cloves garlic minced
  • 1 cup chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup fresh parsley chopped (for garnish)

Method
 

  1. Slice the sausage into 1-inch rounds. Wash and cut the potatoes. Chop the onion and bell peppers.
  2. Lightly coat the crock pot with olive oil. Layer the potatoes on the bottom.
  3. Add the onion, peppers, and garlic over the potatoes.
  4. Sprinkle with paprika, thyme, salt, and pepper. Arrange the sausage on top.
  5. Pour broth around the edges. Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours.
  6. Stir gently before serving. Garnish with chopped parsley.

Notes
