Method
- Preheat oven to 350°F and grease a 9x13 inch baking dish.
- Season chicken with salt, pepper, and garlic powder. Cook in olive oil for 6-7 minutes per side until browned and cooked through. Let cool, then dice.
- In a large bowl, mix mayonnaise, sour cream, and onion soup mix until smooth.
- Layer rice on the bottom of the baking dish. Add chicken and vegetables. Spread the creamy mixture evenly over the top.
- Sprinkle cheddar cheese across the surface. Mix breadcrumbs with melted butter and paprika, then add as the final topping.
- Cover with foil and bake for 30 minutes. Remove foil and bake 15-20 minutes more until golden and bubbly.
- Let rest 10-15 minutes before serving.

Notes
Use rotisserie chicken for quicker prep. Greek yogurt can replace mayo for a lighter version. Add bell peppers, zucchini, or mushrooms to increase veggies.
