Ingredients
  

  • 4 boneless skinless chicken breasts (about 2 pounds)
  • 2 cups cooked white rice jasmine or basmati
  • 1 cup mayonnaise
  • 1 cup sour cream or Greek yogurt
  • 1 packet onion soup mix
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup breadcrumbs panko preferred
  • 2 tablespoons butter melted
  • 1 cup frozen mixed vegetables or fresh broccoli florets
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika

Method
 

  1. Preheat oven to 350°F and grease a 9x13 inch baking dish.
  2. Season chicken with salt, pepper, and garlic powder. Cook in olive oil for 6-7 minutes per side until browned and cooked through. Let cool, then dice.
  3. In a large bowl, mix mayonnaise, sour cream, and onion soup mix until smooth.
  4. Layer rice on the bottom of the baking dish. Add chicken and vegetables. Spread the creamy mixture evenly over the top.
  5. Sprinkle cheddar cheese across the surface. Mix breadcrumbs with melted butter and paprika, then add as the final topping.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake 15-20 minutes more until golden and bubbly.
  7. Let rest 10-15 minutes before serving.

Notes
