  • 4 cups cooked chicken shredded
  • 1 10.5 oz can cream of chicken soup
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 8 oz cream cheese softened
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
For the crispy topping:
  • 2 cups Ritz crackers crushed
  • 1/2 cup unsalted butter melted
  • 1 tablespoon poppy seeds
  • 1 cup shredded cheddar cheese

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, mix cream of chicken soup, cream cheese, sour cream, and cottage cheese with an electric mixer until smooth.
  3. Stir in chicken broth, garlic powder, onion powder, thyme, salt, and pepper. Adjust seasoning to taste.
  4. Fold in shredded chicken until evenly coated.
  5. Spread mixture into prepared dish and tap gently to remove air bubbles.
  6. In a bowl, mix crushed Ritz crackers, melted butter, and poppy seeds until evenly coated.
  7. Sprinkle cheddar cheese over chicken layer, then top with cracker mixture.
  8. Bake uncovered for 30–35 minutes until bubbly and golden. Loosely cover with foil if browning too quickly.
  9. Let rest 5–10 minutes before serving to set and enhance flavor.
