Ingredients
  

  • 2 pounds ground beef 80/20 lean-to-fat ratio
  • 1 packet Lipton Onion Soup Mix
  • 2 eggs lightly beaten
  • 3/4 cup plain breadcrumbs or quick oats
  • 1/2 cup whole milk
  • 1/3 cup ketchup plus more for topping
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon minced garlic
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
For the glaze:
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder

Method
 

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment or lightly oil a baking sheet for free-form.
  2. In a large bowl, combine beef, soup mix, eggs, breadcrumbs, milk, ketchup, Worcestershire, garlic, parsley, and pepper. Mix gently with hands.
  3. Form into a loaf and place in prepared pan or shape on baking sheet (about 9x5 inches).
  4. In a bowl, whisk ketchup, brown sugar, vinegar, and garlic powder. Spread glaze over the loaf.
  5. Bake for 1 hour, or until internal temperature reaches 160°F (71°C).
  6. Rest meatloaf for 10 minutes before slicing to retain juices.
