French Onion Meatloaf with Melted Swiss Cheese

Ingredients
  

  • 2 pounds ground beef 80/20 blend for optimal moisture
  • 1 large yellow onion thinly sliced
  • 1 medium sweet onion diced
  • 3 cloves garlic minced
  • 1 cup panko breadcrumbs
  • 2 large eggs beaten
  • 1/2 cup whole milk
  • 2 tablespoons Worcestershire sauce
  • 1 packet French onion soup mix
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried
  • Salt and black pepper to taste
  • 6 oz Swiss cheese sliced or shredded
  • 1 large onion thinly sliced into rings
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • 1/4 cup beef broth

Method
 

  1. Heat olive oil and butter in a skillet over medium-low heat. Add sliced onions and cook 15-20 minutes until caramelized. Add brown sugar in the last 5 minutes.
  2. In a bowl, combine beef, diced onion, garlic, breadcrumbs, eggs, milk, Worcestershire sauce, and soup mix. Mix gently. Season with salt, pepper, and thyme.
  3. Preheat oven to 350°F (175°C). Shape into a loaf on parchment-lined pan. Bake for 45 minutes.
  4. Remove and layer Swiss cheese over the top. Let residual heat start melting it.
  5. Top with caramelized onions. Bake another 15-20 minutes until internal temp reaches 160°F (71°C).
  6. Rest 10 minutes before slicing to retain juices and structure.
