- Heat olive oil and butter in a skillet over medium-low heat. Add sliced onions and cook 15-20 minutes until caramelized. Add brown sugar in the last 5 minutes.
- In a bowl, combine beef, diced onion, garlic, breadcrumbs, eggs, milk, Worcestershire sauce, and soup mix. Mix gently. Season with salt, pepper, and thyme.
- Preheat oven to 350°F (175°C). Shape into a loaf on parchment-lined pan. Bake for 45 minutes.
- Remove and layer Swiss cheese over the top. Let residual heat start melting it.
- Top with caramelized onions. Bake another 15-20 minutes until internal temp reaches 160°F (71°C).
- Rest 10 minutes before slicing to retain juices and structure.
