Chicken Ritz Cracker Casserole

Ingredients
  

  • 3 cups cooked chicken shredded or cubed
  • 2 cups Ritz crackers crushed (about 1½ sleeves)
  • ½ cup 1 stick butter, melted
  • 1 10.5 oz can condensed cream of chicken soup
  • 1 cup sour cream
  • 2 tablespoons milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: 1 cup mixed vegetables peas, carrots, corn

Method
 

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish. Shred or cube cooked chicken.
  2. In a bowl, mix cream of chicken soup, sour cream, milk, garlic powder, onion powder, thyme, salt, and pepper.
  3. Fold chicken (and optional vegetables) into the sauce until well coated.
  4. In another bowl, crush Ritz crackers and mix with melted butter.
  5. Spread chicken mixture into baking dish, top with cheddar cheese, then the cracker mixture.
  6. Bake uncovered for 30-35 minutes until bubbly and golden brown. Let rest 5-10 minutes before serving.

Notes
