Cheesy Mashed Potato Puffs

These cheesy mashed potato puffs turn leftover mashed potatoes into crispy, golden bites of fluffy, savory perfection. Easy to prep and crowd-pleasing, they're perfect as a side dish, appetizer, or snack.

Ingredients
  

  • 2 cups cold mashed potatoes
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs beaten
  • 3 tablespoons chopped chives or green onions
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs panko preferred
  • Cooking spray or 2 tablespoons olive oil

Method
 

  1. In a large bowl, combine mashed potatoes, cheddar, Parmesan, eggs, and chives. Let the mixture sit at room temperature if too stiff to mix easily.
  2. Add flour, garlic powder, onion powder, salt, and pepper. Fold gently until combined. Optional: Add paprika or cayenne for heat.
  3. Preheat oven to 425°F (220°C). Line a baking sheet with parchment or grease a mini muffin tin.
  4. Portion into 1.5-inch balls and roll in breadcrumbs. Place on prepared sheet or muffin tin.
  5. Spray or brush with oil and bake 20–25 minutes, turning halfway, until golden and crispy.
  6. Let rest for 2–3 minutes before serving. Garnish with chives or Parmesan. Serve with sour cream or dipping sauce if desired.

Notes
