Cheesy Garlic Butter Corn on the Cob

Corn on the cob loaded with garlic butter and melted cheese. A quick, flavorful summer side dish that's easy to prep and perfect for grilling season.

Ingredients
  

  • 6 ears of fresh sweet corn husks and silk removed
  • ½ cup 1 stick unsalted butter, softened
  • 4 cloves garlic finely minced
  • ¼ cup fresh parsley finely chopped
  • ½ cup grated Parmesan cheese
  • ½ cup shredded cheddar cheese
  • ¼ teaspoon red pepper flakes optional
  • Salt and freshly ground black pepper to taste

Method
 

  1. Mix softened butter, garlic, parsley, half the cheese, red pepper flakes, salt, and pepper in a bowl. Set aside.
  2. Cook corn using one of three methods: boil (5–7 min), grill (10–12 min), or microwave (3–4 min/ear).
  3. While corn is hot, spread with garlic butter mixture to coat all sides.
  4. Sprinkle with remaining cheese. Optional: broil 2–3 min until cheese melts and browns slightly.
  5. Garnish with more parsley, paprika, and black pepper. Serve immediately.

Notes

Use plant-based butter and nutritional yeast for a vegan version. Avoid overcooking corn. Always use room-temp butter for easier spreading. Grate your own cheese for best melting.
