Cheddar Crusted Ground Beef Rice Casserole

Ingredients
  

  • 1 pound lean ground beef
  • cups long-grain white rice
  • 3 cups low-sodium beef broth
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 1 can 14.5 oz diced tomatoes, drained
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 2 cups sharp cheddar cheese grated
  • ½ cup panko breadcrumbs
  • 2 tablespoons butter melted
  • ¼ cup fresh parsley chopped

Method
 

  1. Preheat oven to 375°F. Heat olive oil in oven-safe skillet or Dutch oven over medium-high heat. Sauté onions and bell peppers for 4-5 minutes.
  2. Add garlic and cook 30 seconds. Add ground beef and cook until browned, 6-8 minutes. Drain fat if needed.
  3. Stir in oregano, paprika, salt, pepper, and tomatoes. Cook 2-3 minutes.
  4. Add uncooked rice and stir to coat. Pour in beef broth, stir, and bring to simmer. Remove from heat.
  5. In a bowl, combine cheddar cheese, panko breadcrumbs, butter, and parsley.
  6. Cover skillet with foil and bake 35 minutes. Remove foil, top with cheddar crust mixture, and bake 15-20 more minutes.
  7. Rest casserole 10 minutes before serving.

Notes
