- 2 tablespoons dried white lotus petals (or 3 tablespoons fresh petals)
- 1 tablespoon lotus seeds, crushed (optional)
- 2 cups filtered water
- 2 tablespoons honey or agave nectar
- 1 tablespoon freshly squeezed lemon juice
- 1/2 teaspoon vanilla extract
- Ice cubes
- Mint leaves and lemon slices for garnish
Instructions
- Rinse dried or fresh lotus petals gently under cold water and pat dry.
- In a pitcher, heat filtered water to about 190°F (88°C), then add petals and optional seeds. Cover and steep for 30 minutes.
- Strain the infusion into a clean pitcher and stir in honey while warm (not hot).
- Add lemon juice and vanilla extract. Cool to room temperature, then refrigerate for 2 hours.
- Serve chilled over ice, garnished with mint and lemon slices.
Notes
Do not over-steep petals to avoid bitterness. Store in a glass container for up to 3 days. Enhance flavor with coconut water or orange blossom water, or freeze petals into decorative ice cubes.
