Ingredients

  • 4 cups cooked chicken, shredded or cubed (rotisserie chicken works wonderfully)
  • 1 box (6 oz) chicken stuffing mix
  • 1 can (10.75 oz) cream of chicken soup
  • 1 can (10.75 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1/4 cup chicken broth
  • 2 cups mixed vegetables (frozen works great)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup grated cheddar cheese (optional topping)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Prepare stuffing mix using 25% less liquid than package directions. Let stand 5 minutes.
  3. In a bowl, whisk cream of chicken soup, cream of mushroom soup, sour cream, and chicken broth until smooth.
  4. Fold in vegetables, onion, garlic, parsley, thyme, salt, and pepper.
  5. Stir in cooked chicken until evenly combined.
  6. Layer half the stuffing in the baking dish. Spread chicken mixture on top. Add remaining stuffing as the top layer.
  7. Cover with foil and bake for 30 minutes. Remove foil, top with cheese if using, and bake 15 minutes more until golden and bubbling.

Notes

For a healthier twist, swap sour cream with Greek yogurt, use gluten-free stuffing, or replace canned soups with homemade cream sauce. Let casserole rest 10–15 minutes before serving for best texture.
