  • 2 cups shredded cheddar cheese
  • ½ cup cream cheese, cubed
  • 2 tablespoons cornstarch
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • Salt to taste

Instructions

  1. Add potatoes, kielbasa, onion, and garlic to slow cooker. Toss to mix.

For a lighter version, use turkey kielbasa and half-and-half. Freshly shredded cheese melts better than pre-shredded. Avoid opening the lid while cooking to maintain consistent temperature.
