These cheesy mashed potato puffs turn leftover mashed potatoes into crispy, golden bites of fluffy, savory perfection. Easy to prep and crowd-pleasing, they’re perfect as a side dish, appetizer, or snack.

- 2 cups cold mashed potatoes
- 1 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs, beaten
- 3 tablespoons chopped chives or green onions
- 2 tablespoons all-purpose flour
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup breadcrumbs (panko preferred)
- Cooking spray or 2 tablespoons olive oil
Instructions
- In a large bowl, combine mashed potatoes, cheddar, Parmesan, eggs, and chives. Let the mixture sit at room temperature if too stiff to mix easily.
- Add flour, garlic powder, onion powder, salt, and pepper. Fold gently until combined. Optional: Add paprika or cayenne for heat.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment or grease a mini muffin tin.
- Portion into 1.5-inch balls and roll in breadcrumbs. Place on prepared sheet or muffin tin.
- Spray or brush with oil and bake 20–25 minutes, turning halfway, until golden and crispy.
- Let rest for 2–3 minutes before serving. Garnish with chives or Parmesan. Serve with sour cream or dipping sauce if desired.
Notes
For dairy-free or gluten-free versions, use plant-based cheese and gluten-free breadcrumbs or flour. Add vegetables or use mashed cauliflower to make it lighter.
