Description
Corn on the cob loaded with garlic butter and melted cheese. A quick, flavorful summer side dish that’s easy to prep and perfect for grilling season.
Ingredients

- 6 ears of fresh sweet corn, husks and silk removed
- ½ cup (1 stick) unsalted butter, softened
- 4 cloves garlic, finely minced
- ¼ cup fresh parsley, finely chopped
- ½ cup grated Parmesan cheese
- ½ cup shredded cheddar cheese
- ¼ teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
Instructions
- Mix softened butter, garlic, parsley, half the cheese, red pepper flakes, salt, and pepper in a bowl. Set aside.
- Cook corn using one of three methods: boil (5–7 min), grill (10–12 min), or microwave (3–4 min/ear).
- While corn is hot, spread with garlic butter mixture to coat all sides.
- Sprinkle with remaining cheese. Optional: broil 2–3 min until cheese melts and browns slightly.
- Garnish with more parsley, paprika, and black pepper. Serve immediately.
Notes
Use plant-based butter and nutritional yeast for a vegan version. Avoid overcooking corn. Always use room-temp butter for easier spreading. Grate your own cheese for best melting.
