This cheddar crusted ground beef rice casserole is a hearty, one-dish comfort meal made with seasoned beef, fluffy rice, and a golden cheesy topping that everyone will love.

- 1 pound lean ground beef
- 1½ cups long-grain white rice
- 3 cups low-sodium beef broth
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes, drained
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- ½ teaspoon black pepper
- 1 teaspoon salt
- 2 cups sharp cheddar cheese, grated
- ½ cup panko breadcrumbs
- 2 tablespoons butter, melted
- ¼ cup fresh parsley, chopped
Instructions
- Preheat oven to 375°F. Heat olive oil in oven-safe skillet or Dutch oven over medium-high heat. Sauté onions and bell peppers for 4-5 minutes.
- Add garlic and cook 30 seconds. Add ground beef and cook until browned, 6-8 minutes. Drain fat if needed.
- Stir in oregano, paprika, salt, pepper, and tomatoes. Cook 2-3 minutes.
- Add uncooked rice and stir to coat. Pour in beef broth, stir, and bring to simmer. Remove from heat.
- In a bowl, combine cheddar cheese, panko breadcrumbs, butter, and parsley.
- Cover skillet with foil and bake 35 minutes. Remove foil, top with cheddar crust mixture, and bake 15-20 more minutes.
- Rest casserole 10 minutes before serving.
Notes
Use uncooked rice for proper texture. Freshly grate cheese for best melting. Let casserole rest to absorb liquid and slice cleanly.
